The Bee’s Knees Gin Cocktail – one of our absolute favourites!
For aficionados of Craobh Gin, this vibrant and luscious cocktail embodies the spirit of our brand. Comprising just three essential components — honey, lemon, and the heart of the show, our gin — a well-crafted Bee’s Knees cocktail brilliantly showcases the intricate flavors of our signature spirit. While this classic Prohibition-era libation may have originated as a remedy for subpar bathtub gin, its timeless appeal endures, thanks to its invigorating simplicity.
To harmoniously blend honey with cold liquids and ice, we’ve artfully crafted a honey simple syrup for this recipe. Elevating the botanical symphony, we introduce thyme to infuse the syrup, a delightful choice that’s entirely optional but undeniably delicious. For the adventurous cocktail enthusiast, a pinch of chili flakes in your honey simple syrup transforms the Bee’s Knees into a spirited, fiery concoction.
On the other hand, for a more refreshing and floral experience, a quick shake with 1/2 teaspoon of rose water offers a delightful twist. It’s worth noting that this recipe yields ample honey syrup for eight cocktails, and it maintains its quality in the refrigerator for up to two weeks. Ingredients
HONEY SYRUP
1/2 c. honey
1/4 c. water
5 sprigs thyme
COCKTAIL
2 oz. gin
3/4 oz. fresh lemon juice
Lemon peel and thyme sprig,
for garnish
THE HONEY SYRUP
Step 1
In a small saucepan over medium heat, cook honey, water, and thyme, stirring constantly and bruising thyme leaves as you stir, until honey has dissolved, about 2 minutes. Let cool to room temperature, then discard thyme.
Step 2
Honey syrup can be made 2 weeks ahead. Transfer to an airtight container and chill.
THE COCKTAIL
Step 1
In a cocktail shaker, combine gin, lemon juice, and 3/4 oz. honey syrup. Fill shaker with ice and vigorously shake until outside of shaker is very cold, about 20 seconds.
Step 2
Strain into a coupe glass. Garnish with lemon and a sprig of thyme.
Step 3
Serve with family and friends. Slàinte mhath.
